The Tatarian is inspired by Berkeley's endearing history. Just before the turn of the century, each new land owner to buy property in the neighborhood would receive a shade tree as a gift from the city. In the years to follow, the Maple tree (specifically the Tatarian variety) was the one that thrived and grew the most successfully on Berkeley soil, despite not even being native to the state of Colorado.
About The Menu
The first volume of Tatarian's cocktail book focuses on trees grown throughout the entire world, drawing inspiration from their ecology, their history, and the culture of their native country where they grow. The cocktails reflect the tree's traits, whether through the ingredients used in the recipe, or through appearance and presentation.
"Tatarian is something that we're hoping to plant into the Berkeley area for it to grow into something great"
-Josh Sevy, Bar Manager
